Equipment

  • Parchment Paper
  • Baking Tray
  • Mixing Bowl

Ingredients

Shortbread crust

  • 1 cup Cannabis butter
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups + 2 tbsp all-purpose flour

Lemon filling

  • 2 cups granulated sugar
  • 6 tbsp all-purpose flour
  • 6 eggs large
  • 1 cup lemon juice

Instructions

Shortbread Crust

  • Preheat the oven to 325°F. Line the bottom and sides of a 9×13 baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out.
  • Mix the melted butter, sugar, vanilla extract, and salt together in a medium bowl. Add the flour and stir to thoroughly. Press firmly into prepared pan, making sure the layer of crust is nice and even. Bake for 18-20 minutes or until the edges are lightly browned.

Lemon filling

  • Sift the sugar and flour together in a large bowl. Add the eggs and lemon juice and whisk until completely combined.
  • Pour filling over warm crust. Bake the bars for 22-26 minutes or until the center is relatively set and no longer jiggles. Remove bars from the oven and cool completely at room temperature. Once the lemon bars have cooled down, put them in the fridge for 1.5 -2 hours.
  • Using the overhanging parchment paper carefully lift the parchment paper out of the pan. Cut these lemon bars to whatever size you'd like. Depending on the potency of your cannabutter you might want to cut them small or large.
  • Be sure to play around with the calculator further down in this post to see what potency you'd like the squares.

Potency calculator

If you don’t know the potency of your cannabis butter, you’re going to have a hard time finding the potency of your lemon squares. Another thing to note; since we put the cannabutter in the shortbread crust(which went into the oven for 20 min), some of the cannabinoids are going to burn off. The potency calculator is going to be a bit higher THC percentage than it should be.

When it comes to the potency of your homemade edibles, it’s hard to determine just how potent they really are. We have created a dosage calculator to help estimate the potency of the homemade weed lemon bars. To get an accurate measurement, you will need to know the potency of the cannabutter first. You can find the dosage calculator for the cannabutter at the bottom of that recipe – click here to find that calculator.

Once you know the potency of your cannabutter, you can input it into this dosage calculator below. Keep in mind, this is just a rough estimate. Also if you make an error in the calculation at the start, it will carry through until the end as multiple variables are at play.
