Weed lemon bars are one of the more advanced edible recipes. However, the work required to make them is well worth it. The only ingredient in this recipe that you might not find in your pantry is cannabis-infused butter. Luckily, we have a comprehensive guide to making it here.
Here’s what you’re going to need to make weed lemon bars

- 1 cup Cannabis butter
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 1/2 tsp salt
- 2 cups + 2 tbsp all-purpose flour
Lemon filling
- 2 cups granulated sugar
- 6 tbsp all-purpose flour
- 6 eggs large
- 1 cup lemon juice

Ingredients
Shortbread crust
- 1 cup Cannabis butter
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 1/2 tsp salt
- 2 cups + 2 tbsp all-purpose flour
Lemon filling
- 2 cups granulated sugar
- 6 tbsp all-purpose flour
- 6 eggs large
- 1 cup lemon juice
Instructions
Shortbread Crust
- Preheat the oven to 325°F. Line the bottom and sides of a 9×13 baking pan with parchment paper, leaving an overhang on the sides to lift the finished bars out.
- Mix the melted butter, sugar, vanilla extract, and salt together in a medium bowl. Add the flour and stir to thoroughly. Press firmly into prepared pan, making sure the layer of crust is nice and even. Bake for 18-20 minutes or until the edges are lightly browned.
Lemon filling
- Sift the sugar and flour together in a large bowl. Add the eggs and lemon juice and whisk until completely combined.
- Pour filling over warm crust. Bake the bars for 22-26 minutes or until the center is relatively set and no longer jiggles. Remove bars from the oven and cool completely at room temperature. Once the lemon bars have cooled down, put them in the fridge for 1.5 -2 hours.
- Using the overhanging parchment paper carefully lift the parchment paper out of the pan. Cut these lemon bars to whatever size you'd like. Depending on the potency of your cannabutter you might want to cut them small or large.

If you don’t know the potency of your cannabis butter, you’re going to have a hard time finding the potency of your lemon squares. Another thing to note; since we put the cannabutter in the shortbread crust(which went into the oven for 20 min), some of the cannabinoids are going to burn off.
