Vegan Peanut Butter Weed Cookies
Tasty and easy to make vegan peanut butter weed cookie recipe!
Equipment
- Small, Medium, and Large Bowl or Stand Mixer.
- Oven
- Two Baking Sheets
- Parchment Paper
- Whisk
- Wire Rack *Optional

- 1Step 1
First, Preheat the oven to 350 degrees F (177 Celsius). Line two baking sheets with parchment paper and set them aside.
- 2Step 2
In a small bowl put aside 1/2 cup granulated sugar. This is used for coating the cookie dough balls later.
- 3Step 3
Now start preparing the cookie dough: Inside a medium bowl, whisk together the flour, the baking soda, salt, and nutmeg. Set bowl aside for later.

Next, in a large bowl or a stand mixer, put cannabis-infused coconut oil, peanut butter and sugars on medium speed.

Add the vanilla extract and flax eggs. Beat on medium speed until it's blended together.

Next add the premixed bowl all at once (flour, salt, baking soda, nutmeg). Beat on low speed until the flour has mixed in.

Now with a 1-inch cookie scoop or tablespoon, scoop out the dough. Place the dough between the palms of your hands.

Roll the dough into a ball and coat in sugar. (Use the granulated sugar you set aside at the start). Then place on prepared baking sheets.

Repeat this process for twelve dough balls. They should be spread 2 inches apart. Repeat for the second baking sheet.

Bake for 10-12 minutes until the cookies are slightly brown. Finally, remove the vegan weed cookies from the oven and leave them on the baking sheet for 5 minutes to settle.

After the 5 minutes, carefully move the baked cookies to a wire rack to cool completely.

This recipe looks great! The directions say to set aside 1/2c granulated sugar to coat the cookies. Does 1/2c more granulated sugar get added to the dough with the brown sugar?
